Thanksgiving in Boston
Thanksgiving is one of my favorite holidays, I mean really, it’s all about cooking, eating, and spending time with family. What’s better than that? I served dinner at my apartment this year with seven adults and my two boys. I like having dinner with a small group of people like I do every year, but one year I would love to make dinner for a large group of people. Here is our menu...

California Chicken Club Bites
Occasionally I take something out of the freezer without knowing what I’m going to make for dinner. Last night I took chicken and bacon out with the idea of doing some play on a California Chicken Club Sandwich, without bread (since I didn’t want to go to the store). I decided to make California chicken club bites instead of a sandwich. If I were to make these again I would...

Chicken Egg Rolls
Don’t forget that today is the last day to enter the Nasoya contest (click through for more details). We would love to see your ideas!
I love spring rolls and egg rolls, but have an allergy to shrimp, so I hardly ever get them out at restaurants unless they tell me exactly what is in them. I decided to make my own version so I wouldn’t have to worry. I have tons of ideas to try...

Dinner at Toro Bravo
Last night Justin and I rode our bikes to North Portland for dinner at Toro Bravo, a Tapas restaurant that has won numerous awards, including the Willamette Week’s Best Restaurant 2007. The place had been HIGHLY recommended to us by many of our friends, and reading the Yelp reviews had us salivating before we even left the apartment. We arrived around 5:30 and the place was already packed,...

Snickerdoodles
I’ve become the girl that bakes enough treats to bring to the bar on Sunday morning for football. It’s a good thing though; the bartender heavily discounts our bill, people look forward to whatever treats I bring, and I can bring out my inner mean girl by not giving a treat to people who are mean or obnoxious. Just kidding; I don’t do that… though I wish I could. I...

Cupcake Class at BCAE
This past Wednesday night I helped out at Dustin’s ‘How to Bake the Perfect Cupcake” class at the Boston Center for Adult Education. If you know me, you know I love cupcakes, and I would never pass up an opportunity to bake and eat them for three hours. We made 13 different cupcakes and eight different frostings. Amazing, right?
The class was broken up into stations and...

Pumpkin Whoopie Pies with Vanilla Rum Creme
I have had a craving for pumpkin whoopie pies for awhile now and of course to satisfy that craving I had to bake some of my own. I am almost over my craze for pumpkin, which of course will culminate with my yearly pumpkin creme brûlée, then I will retire my cans of pumpkin until next October.
Ingredients & Directions: Filling:
1 C powdered sugar, sifted

French Toast Soufflé
My mom made this for me last year when I was visiting my parents in Maine. All I remember is waking up to snow and coming downstairs to coffee and this amazing breakfast. I snagged the recipe from her (neither of us know where she pilfered it from) and this is one dish that will make people fall in love with you - boyfriend, girlfriend, sisters of boyfriends, your friends, strangers, pretty much...

Yelp Brunch at The Rattlesnake
I love Yelp. A friend of mine, Erik, told me about it a long time ago and I would look at it occasionally if I was curious about a restaurant or a store that I wanted to go to, but never took it seriously. I never created an account, because I never felt like I had anything to add. Well, that has all changed now, and for a little over a year now I have been writing small reviews on Yelp. I...

Potato Sour Cream Biscuits
I wanted to serve up something special with my Pasta e Fagioli, something besides just a baguette, and took to the internet in search of something good. My mom’s favorite online resource is Cooking Light, and so I popped over there for some inspiration. I uncovered a recipe for Potato Sour Cream Biscuits and decided these would be perfect to make!
Ingredients & Method: (recipe...

Pasta e Fagioli
Yesterday was a pretty dreary day in Portland (as is today - brrr) and I wanted to make something warm that could sit on the stove until Justin got home from band practice. Pasta e Fagioli is one of my favorite one-pot dishes to make, and since most, if not all, ingredients can be found in your pantry, pretty cheap as well. Since it translates to “Pasta and Beans” there’s no...

Two Coast Table Contest
We were lucky enough to get some free coupons from Nasoya, actually too many for both of us to use, so we decided to have a contest! The coupons are for one free package of either tofu, wraps, noodles, or vegi-spread with a maximum value of $3.69. Free food, or at least a coupon for free food, is something neither one of us would ever pass up!
So here are the rules:
Create a seasonal...

Tilapia Provençal
I hardly ever make one-pot dinners and as I was reading through this month’s Martha Stewart Living magazine I came across a recipe for Cod Provençal. I took one look at the picture and knew I had to make it. Fortunately, I had some tilapia fillets in the freezer and almost all the other ingredients in my refrigerator. On my way home from work, I stopped at the grocery store to pick up the...

Eggs in a Basket
As I mentioned in the FAQs, I’ve become pretty much obsessed with Eggs in a Basket. Every few days I beg Justin to make them for me, and finally, the other day, he got sick of doing all the work and taught me to make them myself. I think its a quirky little take on eggs and toast, and you can spice things up (ha) by adding cheese, different spices/seasoning, salsa, Sriracha, etc.

Linguine with Pesto, Beans and Potatoes
I’ve been really into cooking and eating rustic Italian food lately. My favorite is definitely Roman-style food, but with a fridge full of basil that was on its way out, I sought the advice of Mario Batali (ok, ok, his website) for a pesto recipe and found his recipe for Linguine Genovese. The combination of pasta and potatoes, two of my favorite starches, intrigued me enough to try it out...

Kit Kat Bars & Halloween
Halloween is one of my favorite holidays. I love dressing up and going to parties, but what I like even more is going trick or treating with my boys. The entire day building up to actually going out trick or treating is almost as long as Christmas Eve. “When is going to be dark? When are we going out?” We went to my aunt & uncle’s house this year, like we do some years,...

What would you say your style of cooking is?
Meg: Hmm I think I’d describe it as cross-cultural comfort food, for lack of a better phrase. I love making things that remind me of my family or being a little kid, but I also love making stuff my Puerto Rican boyfriend’s grandma made for him when he was young. I guess that’s the best way to put it. I also love carbs and dairy.

About
Two Coast Table is:
Meaghan & Steven
We met in December of 2008 at a meetup for Boston Tumblrs. For those of you unfamiliar with tumblr, it is a social networking blogging platform. You could say we became friends rather quickly, but it really wasn’t until we started stalking internet personalities that our friendship became the truly magical thing it is today. Meg soon announced...
